Does bisexuality mean you'll have sex with anyone?

Nope. People who are bisexual can be attracted to people of all genders. . For example, a heterosexual girl isn’t attracted to every guy she sees, just like every gay guy isn’t attracted to every guy he sees. So, people who are bisexual aren’t attracted to everyone they see.
Think of orientation like a filter. Someone who identifies as heterosexual, lesbian or gay will filter out people of the gender they’re not attracted to without even realizing it. Then other filters come into play when they decide who to form a sexual relationship with. These include personality, values, attraction, interests and a whole lot more! People who identify as bisexual choose partners in these ways—the only difference is that gender isn’t one of the filters.
